Delicious Vegetable Bake

This is a simple but delicious recipe I use to utilize vegetables – but for me it's all about the Aubergines and trying to emulate a roast Aubergine and Parmesan meal we have in Italy.


The Herb mix can be adjusted to suite your own taste.

  Vegetable Bake



1 Large white Onion thinly sliced.

6 cloves of garlic sliced.

2 Medium Aubergines (Egg plants) sliced at ¼ inch (0.5 cm)

2 medium sized potatoes leave the skin on and finely slice.

2 Medium bell Peppers, (Red or Green) sliced finely.

2 or 3 Medium Red Tomatoes and 2 small Courgettes, both chopped at ¼ inch or so.

300 to 400 Grams (10.5 to 14.10 Oz) of Strong, Cheddar cheese, or strong cheese of choice (as long as it melts).

1 Tablespoon of dried Oregano/Sage Mix, or herbs of choice.

3 or 4 Tablespoons of Parmesan Cheese.

Season to taste with Salt and Black pepper.


Preheat oven to 160°C (320°F). In a roasting tray or Casserole ceramic roasting tray put a tablespoon of good Olive Oil and spread to cover the base.

Layer up the ingredients starting with half the Onion and Garlic (Fig 1), then half the Potatoes (Fig 2), half of the Aubergines (Fig 3), then half of the sliced Pepper (fig 4), next half the tomatoes and Courgette (Fig 5), spread ½ a tablespoon of Olive Oil over the mix, sprinkle with half of the herbs and salt/pepper to taste; finish by placing the strong cheese on the top (fig 6) sprinkle with Parmesan to taste, then start again by repeating the process (Fig 7).

Place the dish or tray in the oven covered with tinfoil for about 1 hour, after that, remove from the oven and test with a sharp knife to ensure the vegetables are almost cooked, if not, return to the oven, checking again in about 30 minutes.
Once cooked through, the oven temperature can be increased to 180°C ( 350°F) sprinkle with more Parmesan and place back in the oven to brown (Fig 8 )

Once browned (Fig 9) serve in a shallow bowl (Fig10) with any accompaniment you prefer; or just on its own.
