Jan's Best Blueberry Muffins

This very simple recipe produces consistent sized muffins, and with the added custard powder they taste extra-creamy.

2 cups of plain flour
1 tbsp baking powder
2 tsp of custard powder
1 cup of castor sugar
3/4 cup of blueberries ( I put another handful in )
2 eggs
3/4 cup of milk
3/4 cup oil
Icing sugar to dust

Sift baking powder and custard powder into a bowl.
Add sugar and blueberries.
In a separate bowl mix together eggs, milk and oil.
Add milk mixture to dry ingredients and lightly combine.
Spoon batter into prepared cases or muffin tin and bake at 190C for 20 to 25 mins.

Serve dusted with icing sugar and enjoy.
