Salsa Supreme

This is a Salsa recipe from a Canadian guest in which she uses the name 'Cilantro'; for some of us this is 'Coriander', and I think the reference to Hunts Thick & Rich Zesty Italian Sauce refers to a Ragu Type of sauce found in a tin which tries to emulate Italian flavours, having never tried it, I can't comment. Having said that, the recipe itself sounds very interesting indeed !!!

24 cups peeled, chopped, cored tomatoes, I take out the seeds before chopping.

2 cups white 7% pickling vinegar,

2 cups jalapeno peppers, chop with seeds

2 cups diced red or green peppers

2 cups diced sweet onions

2 cups chopped celery

2- 680 ml. cans Hunts Thick & Rich Zesty Italian Sauce

3 cloves garlic- minced

1 tbsp. Pickling salt, do not use table

1 bunch cilantro, chopped. Or dried cilantro, 1/3 cup.

This year I grew Hole Mole peppers, and added 2 chopped cups.

Red peppers make a prettier sauce, but green are OK.

Cook tomatoes and vinegar for an hour in a large pot. Add remaining ingredients except cilantro and simmer until it is a consistency that you like. Add cilantro. Put in hot jars and process in hot water bath for 15 min.

If hotter salsa is desired, use more jalapenos, and Ring of Fire or Habanero peppers.

For the Suicide heat, I add 2 cups chopped Ring of Fire, plus 1+ cup chopped Habaneros.

For mild, use only 1 cup chopped jalapenos. You can also make half or quarter batches, but it disappears so fast, I make big batches.
